Eggnog Cookies

Today I had a taste for holiday cookies and a carton of eggnog in the fridge. After perusing, I found a recipe for eggnog cookies.

This recipe, on the right, turned out soft and delicious. Yellow tinted frosting is recommended if you have time.

For those of you who aim for holiday perfection but just can't seem to iron out the wrinkles: please note the shopvac under our tree. This is to keep our cat from eating branches and puking them up daily.

  • 1/2 c. white sugar
  • 3/4 cups brown sugar
  • 3/4 cup butter, softened
  • 1/2 cup eggnog
  • 1 teaspoon vanilla extract
  • 2 egg yolks
  • 1 teaspoon ground nutmeg
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon

Oven 300. Bowl 1: Combine flour, baking powder, cinnamon and nutmeg with wisk. Bowl 2 (big): With a mixer, cream sugar and butter until light. Add eggnog, vanilla, and egg yolks; beat at medium speed until smooth. Add bowl 1 and beat at low speed until just combined. Do not overmix.

Drop by teaspoonfuls onto ungreased cookie sheet 1 inch apart. Bake 17-20, or until fork comes out clean from cookie. Cookies will not turn brown on top.
