Halloween Party & Dairy-free Cupcakes

This Halloween we took David's lead and dressed up as a family of black cats. Though our construction paper ears weren't up to par with David's velvet get up, at least mom and dad stayed awake for the party. Jon and Clair Lee (also expecting a baby Lee in April!) hosted the annual Halloween Party and dressed up as Olive Oil and Bruto. We were joined by Raychel, the roller derby queen, and even Tinkerbell made an appearance.

For treats, we brought some dairy-free vanilla cupcakes and lychee/raspberry eyeballs.

Vanilla Cupcakes

  • 2 1/4 c. flour
  • 1/4 tsp. salt
  • 3 teaspoons baking powder
  • 1 cup sugar
  • 1/3 c. canola oil
  • 3/4 c. almond milk
  • 2 eggs, beaten
  • 2 tsp. vanilla

Stir flour and other dry ingredients together. Add oil, milk, eggs and vanilla. Mix on medium till blended. Fill prepared muffin tin with batter, filling 2/3 full. Bake at 375°F for about 15 min.

Chocolate Frosting

Mix a bunch of powder sugar, coco powder, 1 tsp. vanilla, almond milk, and salt to taste in bowl on medium until smooth. Frost!

Add a gummy worm and there you!

Lychee Raspberry Eyeballs

Shove raspberries into canned Lychee fruits. Delish, if you can stand the texture of peeled grapes.
